$5 Dinners is a wonderful blog that will help you reduce you grocery budget by providing you with low cost ideas for meals. I will be featuring one of Erin’s dinners evey Sunday for all of you, my frugal friends- but I really recommend you head on over there and check out $5 Dinners.

Broccoli Tuna Casserole
Ingredients
Extra virgin olive oil ($.10)
rice flour or wheat flour ($.10)
Rice milk or regular milk ($.50)
Cornstarch ($.05)
Salt and Pepper
Rice pasta – penne pasta (Use wheat pasta) ($1) I used 1/2 a bag of rice pasta from Trader Joes.
1/2 bag frozen broccoli ($.50)
1 can tuna ($.61)

Directions
1. Cook pasta according to package directions.
2. In a large skillet, make homemade white sauce or homemade GF white sauce.
3. Add frozen broccoli and cook in sauce about 2-3 minutes until soft. Then add tuna. Stir through.
4. Add cooked pasta to the sauce, broccoli and tuna. Stir through and let simmer until sauce has thickened as you like it. Season with salt and pepper to taste.
