Gluten Free Banana Bread | Christmas Recipe Linkup

December 12, 2011

banana-bread recipeFor December we are going to replace the Slow Cooker linkup with a Holiday Recipe Linkup- Right now we are focused on Christmas. We would love it if you would leave your favorite Christmas recipe below!!

I think this would be a great gift if you know anyone who is gluten free!!

Gluten Free Banana Bread

Ingredients

1 stick butter, softened ($.75)
4 medium ripe (brown spots) bananas ($.60)
2 eggs ($.20)
1 cup sugar ($.80)
2 teaspoon real vanilla (Gluten Free) ($.10)

1 1/2 cups fine rice flour* ($.37)
1/2 cup sorghum flour ($.38)
1/2 tablespoon ground flax ($.05)
1/4 tsp salt ($.01)
2 teaspoons baking powder (Gluten Free) ($.05)
1/2 cup chopped pecans or walnuts (optional, I did not use)

Instructions

Preheat oven to 350 Degrees
Mash bananas in a small bowl and set aside.
In a large bowl, cream your butter with sugar with a mixer (stand or hand held).
Add in eggs, vanilla and mashed bananas.
In a separate bowl, combine flours, ground flax, salt and baking powder.
Add dry ingredients (about a 1/4 cup at a time) to the wet and beat until combined.
If you add nuts, gently fold them in at the end.
Pour batter into greased 5 x 9-inch loaf pan.
Bake at 350 degrees for one hour or until toothpick comes out clean.

Cost:$3.31

*make sure you use fine ground rice flour, it will turn out very different if you use regular rice flour- which has a grainy texture. And please know that is a terrible price at Amazon!! I pick it up at my local Thai market for $.99 a bag).
