quinoa-4b250Quinoa is good stuff.  It is super good for you (it’s a superfood, gluten free and a complete protein).

If you have not tried it you really should.  That said, I think it is an acquired taste.  It has a unique flavor.

One of the things I like so much about it is that it cooks as fast at white rice (brown rice takes FOREVER!).  SO if the flavor is new to you you can “break it in” by mixing the white rice and quinoa and cooking them together for kind of a pilaf.

I hope you try my Quinoa with Pecans and Raisins.  I served it with baked Almond crusted fish and it was good together, a nice change from a noodle or rice side dish (and better for you).

Quinoa with Pecans and Raisins

Serves: 4-6

Ingredients
  • 1 cup of dry quinoa (I used red, any is fine)
  • 1 ½ cups chicken stock
  • ¼ tsp salt (if stock is salted, omit)
  • ½ tablespoon butter
  • ¼ cup chopped pecans
  • ¼ cup raisins

Instructions
  1. Combine quinoa, chicken stock, salt (if needed) and butter in a medium saucepan.
  2. Cook on medium, covered for about 20 minutes or until all water is absorbed and quinoa is tender.
  3. Fluff Quinoa with a fork and add pecans and raisons
  4. Stir lightly to combine
  5. Serve

Pork Roast with Baked Apples

roastsp-30b2502I loved Roast as a kid.  It was my favorite meal.

We don’t have a lot of roasts anymore because my husband is not a big meat eater.  Too bad, because they are yummy ;)

I did experiment with a Pork Roast with Baked Apples recipes they other day and it came out well,  so I thought I would share it with you.  I did cook mine in an oven safe pan, if you don’t have one of these go ahead and transfer the Pork Roast with Baked Apples into an oven safe dish sprayed with cooking spray after you brown the sides in the pan.

Pork Roast with Baked Apples

Pork Roast with Baked Apples

Serves: 6

Ingredients
  • ¼ lb Pork Roast
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon ground sage
  • 1 tablespoon palm sugar or brown sugar
  • 1 teaspoon Apple Cider Vinegar
  • 1 teaspoon Olive Oil
  • Salt and Pepper to taste
  • 3 medium cooking apples cored and sliced into 8 pieces each (peel if you like)
  • 1 tablespoon butter
  • ¼ cup chicken stock (or ½ cup if you want more)

Instructions
  1. Preheat oven to 375 degrees
  2. Mix onion, garlic, sage, vinegar and sugar in a small bowl, place aside
  3. Heat oven safe skillet* on medium, with olive oil
  4. Salt and Pepper roast to taste
  5. Add roast to the hot skillet and brown on each side (about 5 minutes per side)
  6. Sprinkle herb/sugar seasoning mix on top of roast. Pack slightly
  7. Add apples to skillet with roast
  8. Place in oven and bake for 40-45 minutes.
  9. Remove roast and apples from pan and heat pan over medium on stove top
  10. Deglaze pan with ¼ cup chicken stock (more if you like) and simmer
  11. Add butter to sauce and pour over pork after sliced.
  12. Allow roast to rest 20 minutes before slices and serving with apples.

Cheesy Twice Baked Sweet Potatoes with Bacon

Twice Baked Sweet PotatoesWow.. I really loved these Twice Baked Sweet Potatoes.  I have been pondering this recipe for a long time, about 2 months.  When I was first going to make then I got sick.. so the ingredients just sat there and eventually got eaten for something else.

But I finally was able to make them for dinner the other night.  And boy, were they good!  We really love sweet potatoes around here so these Cheesy Twice Baked Sweet Potatoes with Bacon were a new taste treat.

Cheesy Twice Baked Sweet Potatoes with Bacon

Serves: 8

Ingredients
  • 4 medium sweet potatoes (about 6-7 oz each)
  • 1 tablespoon reserved bacon fat, butter or coconut oil
  • 8 oz (uncooked weight) of cooked bacon, chopped (reserve bacon fat)
  • 6-8 oz of Monterey Jack Cheese, shredded
  • 2 tablespoons milk
  • ¼ tsp salt
  • Pinch of pepper
  • Cooking spray

Instructions
  1. Preheat oven to 375 degrees
  2. Place Sweet Potatoes on cookie sheet and bake for about 45 minutes or until soft
  3. Remove from oven and allow to cool enough to touch
  4. Cut sweet potatoes in half
  5. Scoop potato out of the skin (don’t go all the way down to the skin)
  6. Place in medium bowl
  7. Add bacon fat, 1 tablespoon of chopped bacon, 2-4 tablespoons of cheese, milk, salt and pepper.
  8. Mash lightly with a fork to combine (not to much or it will get gummy)
  9. Fill skins with mixture
  10. Place into an oven safe dish sprayed with cooking spray
  11. Top with remaining cheese and bacon
  12. Bake for 20 minutes or until cheese is melted

“Cheesy” Taco Popcorn (Tastes like Doritos!)

"Cheesy" Taco Popcorn (Tastes like Doritos!)I like to make popcorn for my girls lunches, its super cheap and I don’t have to worry about any funky ingredients I don’t want them to have.

I decided to make this “Cheesy” Taco Popcorn in order to mix it up for them, and they really liked it.

Keep in mind my recipe is not real cheese.. it’s Nutritional Yeast.  Never hear of it?  It’s great stuff.  It has a cheesy flavor so you can actually use it to replace cheese in some recipes (the other day I put it in a quiche I made and it did not need any cheese at all. It’s fun to sprinkle on popcorn all by itself or you can mix it into mayo for a unique sandwich spread..

2 tablespoons of Nutritional Yeast have 60 calories with 5 g of carbohydrates (4 g are fiber),  9 g of complete protein, nine amino acids, selenium and potassium and it has 35 to 100 percent of all of the B vitamins, except  B12.

See??.. good stuff :)   Now go get some and try this popcorn (in a pinch you could use powdered cheese.. but it has none of that good stuff).

“Cheesy” Taco Popcorn (Tastes like Doritos!)

Ingredients
  • 1 tablespoon Nutritional Yeast
  • ⅛ teaspoon garlic powder
  • ⅛ teaspoon onion powder
  • ⅛ teaspoon cumin
  • ⅛ teaspoon paprika
  • ⅛ teaspoon chili powder (not hot)
  • ¼ teaspoon salt

Instructions
  1. Put all ingredients in to a coffer grinder and grind for a few seconds
  2. Note: You could simply mix the ingredients, but I liked making them fine and powdery
  3. Sprinkle on 6-8 cups of popcorn prepared with butter or coconut oil or a combo of both
  4. Place any leftover in a small airtight container
  5. Feel free to double, triple or whatever :)
